However, for some reason, the filter button's in the pivot table are not working for me.
Any idea why?

Hi Tom,
Sort order flows from left to right and this constrains how you can sort in each subsequent column. If you sort the Project A to Z, then Task Z to A you cannot then sort Resp, Start Date and End Date any differently because there is only one Resp., Start Date and End date for each task, so the sort order of Task dictates the sort order of the remaining columns. If you want to sort by date within project, then you need to move the date column you want to sort by to the left i.e. where the task column is.
