Hi Eileen,
If you're using Power Pivot then you could write a DAX measure for the 3 day average. If you're using regular PivotTables then you'd need to add this calculation to the source data. However, if you have multiple values per day in the source data then it'll be tricky because the PivotTable will then aggregate the averages from the source and that's probably not what you want.
Hard to say without seeing an example file.
