I'm not aware of an option that lets you convert a pbix file to xlsx. The OP in the thread you referred to used Power Query within Power BI to connect to multiple files. You can just copy the query(s) from a Power BI file and paste them into PQ for Excel. That should work just fine. Obviously, you need to set the Source for each query to point at the relevant file location(s) on your own system.
